Favorite Fall Foods
My pumpkin pie spice has found it's way to the front of the cupboard. I'm stocked with all the ingredients for chili...several pots. I've pulled out all my recipes that include apples. Fall comfort foods, at its finest.
Last week, I had 4 medium Granny Smith apples that needed using. So, I came up with this recipe & boy, was it a hit. It's what I call a 'cheater' recipe. Ya know, the kind of recipe that requires minimal effort & uses ready-made ingredients. Sandra Lee would be all over this recipe (Semi-Homemade Cooking w/Sandra Lee) ;)
I decided to call these Apple Fritters...& here's my recipe:
Peel and chop 4 med. apples.
I used Granny Smith, but whatever you have on hand will work.
In small bowl, toss apples w/ 2 Tbsp. sugar & 1/2 tsp. cinnamon.
You can adjust the sugar/cinnamon to your liking.
Fry apples in sm. skillet coated w/cooking spray to desired doneness, adding in 1 Tbsp. butter.
Cool apples.
After apples are cooled, open 2 cans of biscuits (the small ones).
Flatten each biscuit until it's about the size of an English muffin.
Top 10 of the biscuit rounds w/ a heaping Tbsp. of the chopped apples.
Use the 10 remaining biscuit rounds to top each fritter & use a fork to seal edges.
Fry the fritters in 2 Tbsp. of canola oil over low-med. heat til browned on both sides.
While hot, dust w/mixture of cinnamon & sugar (or powdered sugar).
Not only do these look all cute & 'homemade', they taste delicious!
My boys, all 4 of them, gobbled them up!
I have a feeling these lil' fritters will be requested often.

Family Traditions
Praise God, from Whom all blessings flow~
Crisp air. Orange & red leaves. Fall has arrived ... my favorite season of all.
And thus begins the race against the clock to fit it all the autumn activities.
Each weekend is quickly penciled in on the calendar, filled with fun frolics that can only be enjoyed between late September & November.
Our annual trips are planned to the apple orchard, pumpkin patch & corn maze.
The Covered Bridge Fest is at the top of our list for fall fun.
The farmland of beautiful Indiana is the perfect backdrop for the majestic old covered bridges, some 91 in all.
Camping is at its best...cuddled up in a cozy sweatshirt next to the crackling fire.
And these are the things we do each and every fall.
Family traditions.
I cherish our family traditions & look forward to them from year to year, with eager anticipation.
I love the fact that these traditions remain the same...in the midst of constant changes, busy lives, and ups & downs.
THESE are the things that strengthen our family.
THESE are our opportunities to have GOOD times & make life-long memories.
And hopefully someday, our children will continue these traditions with their families, forming the storyline for our own unique history ... from generation to generation.
For I know the plans I have for you, plans to give you hope & a future.

And so begins...
An incredible feat has been achieved! I have achieved an incredible feat! Anyone listening?! I tell you, I cannot be any more excited than I am right now! I have wanted to enter the blogosphere for a good while, but was held back by um, just a tiny lil' problem. Not only do I know NO ONE who blogs (to give me freebie tips & advice), let's just say that I'm a little - OK, alot - on the technically challenged side;)
My desire to blog won out, so off I went...determined to blog or bust. I read, studied, & educated myself. I watched lots of tutorials. And after hours of searching for just the right template, I realized I didn't know what to do with it after I'd found it! Just when my weariness was winning out, I said a prayer. I asked for understanding...that somehow all this techie lingo would make sense. And ya know, things just started turning around. Between God & google, this blog has come together!
My goal for this blog is to share of God's goodness and grace on our family. I'm sure you'll hear a thing, or 3, about my handsome hubs & fantastic sons. I hope to encourage ladies to embrace their high calling as wives & mothers, a subject which I'm most passionate about. I'll share recipes & decorating tips...& I'm sure the subject of homeschooling will come every now & again. Hopefully this will be a place that you enjoy visiting. Come on in & stay a while.
