Greek Yogurt Parfait


Ever watch a cooking show on TV & see a recipe that looks nothing short of 
"I cannot wait to make that"?



That's exactly how I found this keeper of a recipe & I am delighted to share it with you today!
Thank you, Ree {Pioneer Woman} for a delicious treat.


Here's my adapted recipe:

24 oz. plain Greek yogurt
1/4 - 1/2 cup heavy cream, half & half, or milk {totally your preference}
1 tsp. vanilla
1/2 c. brown sugar
2-3 cups fruit



Mix the yogurt, cream, and vanilla, whisking carefully until combined. 
Generally I use a low-fat milk to keep the calories down, but I've even used a tablespoon or two 
of flavored liquid coffee creamer {Nestle Italian Sweet Creme or Coconut Cream} 
for an added flavor boost. 

Now we will begin to make the parfait in layers.
{I make it in a bowl, more family style, as opposed to individual cup servings.}
In a medium bowl, pour half of the yogurt mixture.
Sprinkle half of the brown sugar evenly over the top of the yogurt mixture, but do not stir!






Layer on the fruit of your choice.
A mix of berries works really great, but so does just about any other fruit.
I've used fresh & frozen ... either work fine.
{I especially love to use bananas & peaches!}




Repeat layering, using the remainder of the yogurt, brown sugar, & fruit.
Cover the bowl with foil or plastic wrap and tightly seal the edges. 
Place in the refrigerator for at least 20-30 minutes. 

Something akin to amazing happens right here!
The brown sugar hardens & forms a bit of a crusty layer on top of the yogurt ...
just an added bonus to this already perfect dessert.








**If you'd like to make individual parfaits, you can put the recipe all together, minus the fruit.
After it's been refrigerated for 20-30 minutes or when you are ready to serve, 
place a small handful of berries (or other fruit) into bowls or cups. 
Spoon some of the yogurt over the fruit. 
There will be creamy areas and brown sugar areas. 
Repeat the layers, ending with fruit on top. 

Be prepared to want one of these every day!

Cleaning out the Cupboard {Here's to HEALTH!}


We've made some positive changes around here over the last couple years,
implementing a few things in the way of health & fitness ...
& although they may not be earth shattering, they are positive steps & I'm proud of us!

James & all three of our sons joined a gym over a year ago
& have consistently gone several times each week to work out & lift weights.
This has been great for several reasons.
Not only do the guys enjoy spending the time together at the gym,
they push each other to lift more, run more, etc.
Nothing like a little friendly competition amongst brothers ... and dad.
And it's especially nice this time of year when it's too cold for outside activities.

Riley continues to jog {he lost 30 lbs by jogging & cutting out sugar in 2012}
& fulfilled a goal in July to participate in the Color Run 5k.
He had a blast.



We made a point to cut out several particular fast food restaurants & while we occasionally
get a hankering for 'burgers & fries', our trips through those type of drive-thrus
are very far & few between.

Several years ago, James started incorporating coconut oil into our diet ...
& we almost exclusively use it now.
We now buy it in bulk from the Amish dry goods store.
The organic cold-pressed extra virgin has more of a coconut taste & smell to it.
James likes to put a spoon of it into his coffee or hot tea.
It's good to take a spoonful for indigestion, head/chest colds, or for a general daily energy booster.
James also spreads it lightly on toast or in oatmeal {it's acts like butter}.


For cooking, frying, & baking, we used the regular coconut oil.
It does not taste or smell like coconut.
I have used this interchangeably in recipes in place of whatever oil is called for & it's worked fine.

The treadmill & bicycles are being used much more.

James enjoys eating lo-carb & has been venturing toward Paleo ...
so that's impacted all of us a bit ... learning how to meal plan & what to eliminate or cut back on.

All in all, these are good changes.
However, we decided while we were on vacation in September,
that we want to take things a step further.
We talked generally about things, but with the busyness of the fall {& factoring in the holidays}
we didn't make too much of a concerted effort to get going.
I did, however, started cleaning out the cupboard -- & I did this by using up some of the items
that I knew we were going to try to eliminate.
Instead of buying this & that at the grocery, I concentrated on making meals around the things
in the cupboard & pantry -- emptying it out so I could fill it with healthier goods.

So, we did what most all folks do in January ...
we formulated our plan & got started!
I thought I'd share our new game plan cause I'm quite excited about it.
{And, to report, we've stuck with it since we rolled it out!}

Here are the changes we've made as a family, regarding FOOD:

We decided there are some things that we no longer want to bring in the house on a regular basis.
  • chips
  • processed sweets such as snack cakes & cookies 
  • {processed foods in general should be limited}
  • individual oatmeal packets
  • canola oil 

Here are the replacements we decided on:
  • baked chips
  • homemade sweets on occasion
  • fruit bars / granola bars {healthier type -- for example Trader Joe's varieties}
  • homemade granola **{I'll share a recipe for that soon}
  • fruit leather
  • large container of DIY instant oatmeal sweetened with brown sugar, cinnamon, nuts, etc**
  • {I'll share my recipe for this soon}
  • coconut oil, olive oil, butter

We also decided to limit ice cream, not keeping it as a staple in the freezer.
We are using whole grain bread more, white bread less, & keeping Ezekiel bread in the freezer for toast.
James & I are using Stevia in place of sugar {the boys don't care for it too much}.
Although I wouldn't say we drink a lot of soda, I am buying less of it ...
keeping  iced tea & lemonade in the fridge.
Gunnar bought a Voss water in the glass bottle & Riley liked the looks of it, so I bought a few of these reusable bottles {along with a couple other containers} to make drinking water a bit more 'exciting'.

James & I have switched to drinking the Kroger CARBmaster milk.
{The boys still have to have their whole milk ... can't get them to drink anything but.}
It's a nonfat, reduced sugar milk drink & it’s delicious, which I was not expecting.
It's low in carbs, packed with 11g of protein per serving, & is lactose free.






I pick up the lactose free milk at Aldi sometimes if I'm not stopping in at Kroger,
but the Kroger brand is my favorite.
The Aldi one is cheaper, but seems to have a sweetness to it that the other one doesn't have.

We also LOVE the CARBmaster yogurt.

One of our favorite new things is this: 
I've been keeping fruit & veggies cleaned, chopped, & ready to eat in the fridge.

I have some nice divided containers that I've been filling with broccoli, cauliflower, radishes,
multi-colored pepper strips, carrots, & celery.
These are great snacks & ready toppings for salad.
{I always have spring mix & fresh spinach.}

And the same idea with the fruit:  strawberries, various melon, pineapple, & grapes.
We all seemed to think that if these foods were prepared & ready,
we'd choose to eat them more often ...  and it's absolutely true!
We've been going through the fruit & veggies more quickly than usual.
As a bonus, I've been making veggie & fruit dip to go alongside.
Course, we always have apples, oranges, bananas, & tangerines in the fridge & fruit basket.

Speaking of fruit & veggies, I bought James the juicer that he'd been wanting forever for Christmas ...
& let me just say, the juice that's been coming out of that thing is nothing short of uh-mazing!!
Fresh orange juice?!  Well, let's just say I can't get enough of it!
{He got an espresso machine for his birthday in November, so we've been drinking like
kings & queens around here!! LOL}

Lastly, & although eating Greek yogurt is nothing new around here,
we've been really enjoying more treats made with it.
{I'll share my favorite recipe with Greek yogurt later this week.}

All these changes came about by sitting down with the whole family & talking about what foods
we should try to eliminate, identifying which ones are those 'trouble' foods
{the ones that aren't good for ya but you can hardly stay out of them when they are in the house ...
think Oreos, chips, ice cream!}.
We all listed foods that we'd like to have more often.
I wrote everything down & have not variated from it.
It's working because we all agreed on it & resolved that we were going to make 
these healthy changes work!

Making health a priority feels really good.
We have a ways to go & plenty of room to improve,
but are enjoying the benefits of our decisions already.

It was fun looking back over each of my blog posts from 2013.
Honestly, most of them seemed so long ago!
I had to keep checking the date to make sure they were really posted in 2013.
Boy, the days & months slip by so quickly, don't they ...

Hello 2014!





It's been idyllic around here for the past few days ... 
and let me tell you why.

You see, I have a 'perfect' December in my mind.
Perfect.
It goes something like this.

ALL month long, I would enjoy my Christmas trees & all the decor
whilst listening to my beloved Christmas music.
I'd be wearing my apron & there would be a baking frenzy going on in my kitchen.
I would have plenty of time to read while sitting by the fire.
The shopping would be complete & the gifts all wrapped.
I'd be surrounded by my family & we'd spend our evenings watching Christmas movies,
sipping hot chocolate, & eating the cookies that I'd been busy baking.

See?!
Pretty close to Norman Rockwell, if you ask me.
That would be my perfect December.



However, it really goes a bit more like this.

I do always enjoy my trees & the decor, all whilst listening to Christmas music.
I also do a fair amount of baking & I usually have on my apron.
So far, so good ... right?

As for having plenty of time to sit by the fire & read, well, seems like one thing
I NEVER have during December is PLENTY of time.
Secondly, I have NO fireplace ;)
Buuut ... if I did, I'd be sitting by it.
Although I start early with my shopping & I stay up on my wrapping,
there's always a few last minute gifts to purchase.

Here's where the monkey wrench gets thrown into my 'perfect' December plans.

It's the 'surrounded by family' {& all the other stuff that went along with that} part.

James, Garrett, & Gunnar all work pretty long hours, with much unpredictability.
They don't have 9-5, clock in, clock out-type jobs.
Everyone leaves & comes home at different times, so keeping a regular routine is nearly impossible.
We give it a valiant try, though & having dinner together at the table is very important to us,
so it's something we try not to budge on.

This December, however, was even busier than normal!
James had lots going on at work, accompanied by suffering with gout & other problems with his foot,
which led to several DR visits, lab work, and an MRI, etc.



Gunnar, in addition to his day job, landed a couple big side jobs
which kept him working both day & night.
Literally.
He even recruited the help of his dad & brothers at the end.
He also traveled out of state for 3 days of training.

Garrett had a profitable month in real estate which kept him occupied, as well.
He too had a training event... 3 days of broker training classes.

Course, James & the boys all had holiday parties with their respective employers
& the political/volunteer groups they participate in.

Now, throw in church activities, extended family gatherings, a couple birthdays (the twins turned 19),
& other random things here & there, we found ourselves in the middle of a BUSY December month.
Although it was full of fun things, it was not quite my 'perfect' December.

We snatched every moment of togetherness that we could snatch ...
& somehow amidst all the madness {lots of which wasn't even listed here},
we were able to sit down together as a family & watch two Christmas movies ... & I was tickled pink.




Let's fast forward to NOW for the good stuff, how 'bout it!
Remember how I said it had been idyllic around here for the past few days?

Well, it really has been!
I've gotten just what I wanted ... just a few days late!
All the things that would've made up my 'perfect' December,
have been going on since New Year's Eve ... and especially this weekend.
Well, all except for the Christmas gifts ... those were all opened on Christmas morning, of course.

James called home on Friday afternoon & said we were having family movie night ...
& at the request of all the boys, cheeseburgers & fries.
{I added some homemade chocolate cookies to the mix & it was a great evening.}

He also said we'd be having our annual 'family goals & plans 2014' meeting the next morning ...
& we'd be having a big breakfast of pancakes & sausage to go along with it.
He said for me to send him the list of what we needed for both meals
& he'd bring it all home from the grocery.

That made me so happy!
Not only did he formulate the plan, he was executing it, as well.
I love it when he takes initiative & makes plans for all of us.




That kicked off our wonderful looong weekend of rest, relaxation, good food & family time.
Every one's schedules were clear {shockingly} & truth be told,
I think they were all needing some down time.

I've cooked our favorite meals.
We've watched movies & had extended times of family worship.
We've enjoyed the Christmas trees {yes, our decorations are still up ... yay}
& Christmas music {yes, my favorite channel is STILL playing it!
OK, in all honesty, I may or may not be the only one still enjoying the Christmas music at this point}.

And as of today, we are snowed in!
We've gotten close to a foot of snow & it's beautiful.
It's made for a couple fun sledding trips to the big hill that's close to our house.
It's pretty much the icing on the cake.



We've had just the slow down & the family time that we needed.
And you know, that's just how God is.
He gives us what we need, even if it's not right when we want it.
That's been exactly the topic of discussion around here lately too ... our expectations vs. God's timing.

We must weigh our hopes, dreams, & ideals against God's Word.
We have to keep ourselves in check, not asking for more than we should ...
not demanding, not seeking our own outside the spectrum of the scripture.
At the same time, we must always to step out in faith, clinging to His promises,
trusting the God who can make the impossible possible, according to His will.
And then we trust.
We trust in the One who is able to do exceeding above what we are even able to think of ask.
He holds our world in His hand ...
and I feel so safe knowing He does.

Now to him who is able to do far more abundantly than all that we ask or think ...
Eph. 3:20

For I know the plans I have for you, declares the Lord, plans for welfare and not for evil, 
to give you a future and a hope.
Jer. 29:11

Trust in the Lord with all your heart, and do not lean on your own understanding.
In all your ways acknowledge him, and he will make straight your paths.
Prov. 3:5-6

The Last Look at Christmas 2013

 I love this season so much!
Can't get enough of it.


James bought me this awesome wooden antique bowl in South Carolina this fall.
I wanted to bring back a treasure & this fit the bill.


A branch of pine greenery & some fancy pine cones fill it perfectly.




The gift stack grew and grew ...  whew, that's a lot of boxes under there.





This deer pillow is a new addition ... isn't he festive?


And I got 2 new lamps a few weeks ago.
We were needing a couple lamps for bedrooms upstairs, so I did a switch-a-roo.
I'll show you more of these later on.


Here's my piano in her Christmas finery.


The window pane, antique mirror, along with the burlap banner have been here for a while ...
I like them to well to move them.







I filled my lantern with antique Christmas ornaments & pine cones
& tied it all up with a brown bow.


James bought me this snowman several years ago ...
I commented on how cute it was & next thing I know,
it was under the tree.


In years past, I've decked out the whole staircase with garland, but it just feels so busy.
I decided to scale back to this, added lights & it's perfect.


Above the patio door, a pine cone wreath hangs in between the antique cutting board & Mr. Antlers.


And one of my favorite pieces, the chalkboard that I repurposed
& the silhouette of my 3 handsome boys, made for me by a sweet friend.
