Watermelon Punch



Happy August, everyone!

We've been experiencing some unusually nice weather here in the Midwest.
It almost feels like fall & I am absolutely loving every minute of it!
We've not had one day in the 90s just yet, with several days not even getting out of the 70s!
Ahhh ... what a great summer it's been.

We still have around 8 weeks left til Autumn officially arrives & I don't want to rush it ...
still plenty of time for good ol' watermelon.
It's one of those summertime favorites ... a classic staple & we have one every couple weeks.
I bought way too much fruit one week though & the watermelon was a little too soft inside
once I got around to cutting into it.
I knew it would probably be the perfect time to try one of the watermelon drinks that I had pinned earlier.
Sure enough ... easy & very refreshing.
Carve up the melon & let the blender do the work.





There are many varieties of watermelon punch, but this sounded most appealing to me.
It has only 3 ingredients!

1 lg. seedless watermelon 
1 2-liter bottle ginger ale, chilled
1/2 gallon raspberry sherbet 

Scoop out the melon, removing any random seeds you may encounter.
Fill the blender  2/3 of the way full & pulse it until smooth. 
Pour into a large pitcher & continue until all the watermelon is blended.
Place in fridge to chill.

One regular sized seedless watermelon made this full gallon pitcher & over half a quart jar.





When you are ready to serve, pour all the watermelon slush into a punch bowl
& add the ginger ale, stirring gently.
After it's mixed, add in the raspberry sherbet.
Lastly, sprinkle a few blueberries over the top {optional}.





 The blueberries went really quick ... so next time, I think I'll also add blueberries directly to each cup.
