Creamy Pumpkin Banana Chocolate Chip Muffins ----- gluten free!





James has now been gluten free for 3 months ...
& I'm so happy that he's not suffering from the joint pain that he's been dealing with for at least 7 years!

I've been experimenting with new recipes & using new products, & so far, with good results!
James has been a happy camper.

I processed several pumpkins in the fall & have a freezer full to use, so I wanted to make something
sweet using the pumpkin ... & gluten free so James could enjoy it.
After looking at lots of recipes, I adapted a couple of them & came up with this one.





A bowl full of muffin batter ... nothing wrong with that!
Well, except the chocolate chips are missing.
[I stirred those in after I snapped the pic.]




Ingredients
1 1/2 cups pumpkin puree
2 ripe bananas, mashed
2 eggs
1/2 cup peanut butter [or almond butter]
1/4 cup coconut oil, softened [or you can use either olive oil or butter]
1/4 cup honey [or you can use maple syrup or agave]
1/2 - 3/4 cup chocolate chips
1 Tbsp. coconut crystals
3/4 cup rice flour
1/3 cup coconut flour
1 tsp baking soda
1/4 tsp salt
1 Tbsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
1/2 tsp. ginger
1 tsp. vanilla

Prep

Blend all wet ingredients until mixed.
Add dry ingredients and blend until smooth, not over-mixing.
Stir in chocolate chips at the end ... I used the minis.
Spoon into the muffin tin, either lined with paper liners or sprayed with cooking spray.
Bake at 350 for 20ish minutes or until toothpick comes out clean.

**I made some in my mini-cupcake pan & some in my regular muffin pan.
The minis only take about 10 minutes to bake.




We really enjoyed these!
Even our 3 sons loved them.
They tasted healthy, but yummy.
They weren't overly sweet, with the chocolate chips being the perfect addition.
Course, we are big fans of pumpkin, so I'm always glad to have another recipe using that ingredient.

DIY Instant Oatmeal

One of our pantry breakfast staples has always been a box of the little individual instant oatmeal packets.
My boys love them & they make for a super quick hot breakfast.
The problem is, as my boys have turned into men, it takes 3 or 4 packets to fill them up.
And, as we've been trying to make healthier choices, everything comes into question ...
how can we eat a healthier version of 'fill in the blank'?
This recipe answers the instant oatmeal question!




This takes no time to put together -- it's healthier & tastes even better!
I've tried a few different recipes & this is the one I like best.






Here are the ingredients:

6 cups quick oats, divided      
2/3 cup brown sugar
1/4 tsp cinnamon
1 1/2 tsp salt
2/3 c non-dairy creamer {powder}






Pour 4 cups of the oats in a large snap-top storage container {or a gallon ziploc bag}.
Pulse the additional 2 cups of oats in a food processor until they are more of a finer,
almost powdery consistency.
Add to the other oats.
Stir in powdered creamer, brown sugar, and salt until well mixed.

To make a bowl of oatmeal, scoop 1/2 cup of the instant oatmeal mixture into a bowl.
Add approximately 3/4 cup of water to oatmeal.
Microwave for 1-2 minutes.

Add milk, cream, butter, dried fruits or nuts ... whatever you enjoy mixed into your oatmeal.

And just how easy is that?!
You get waaayy more for your money going this route!





And if you need it on the go, just put the desired amount into a small ziploc bag
for a portable, quick breakfast.

Cleaning out the Cupboard {Here's to HEALTH!}


We've made some positive changes around here over the last couple years,
implementing a few things in the way of health & fitness ...
& although they may not be earth shattering, they are positive steps & I'm proud of us!

James & all three of our sons joined a gym over a year ago
& have consistently gone several times each week to work out & lift weights.
This has been great for several reasons.
Not only do the guys enjoy spending the time together at the gym,
they push each other to lift more, run more, etc.
Nothing like a little friendly competition amongst brothers ... and dad.
And it's especially nice this time of year when it's too cold for outside activities.

Riley continues to jog {he lost 30 lbs by jogging & cutting out sugar in 2012}
& fulfilled a goal in July to participate in the Color Run 5k.
He had a blast.



We made a point to cut out several particular fast food restaurants & while we occasionally
get a hankering for 'burgers & fries', our trips through those type of drive-thrus
are very far & few between.

Several years ago, James started incorporating coconut oil into our diet ...
& we almost exclusively use it now.
We now buy it in bulk from the Amish dry goods store.
The organic cold-pressed extra virgin has more of a coconut taste & smell to it.
James likes to put a spoon of it into his coffee or hot tea.
It's good to take a spoonful for indigestion, head/chest colds, or for a general daily energy booster.
James also spreads it lightly on toast or in oatmeal {it's acts like butter}.


For cooking, frying, & baking, we used the regular coconut oil.
It does not taste or smell like coconut.
I have used this interchangeably in recipes in place of whatever oil is called for & it's worked fine.

The treadmill & bicycles are being used much more.

James enjoys eating lo-carb & has been venturing toward Paleo ...
so that's impacted all of us a bit ... learning how to meal plan & what to eliminate or cut back on.

All in all, these are good changes.
However, we decided while we were on vacation in September,
that we want to take things a step further.
We talked generally about things, but with the busyness of the fall {& factoring in the holidays}
we didn't make too much of a concerted effort to get going.
I did, however, started cleaning out the cupboard -- & I did this by using up some of the items
that I knew we were going to try to eliminate.
Instead of buying this & that at the grocery, I concentrated on making meals around the things
in the cupboard & pantry -- emptying it out so I could fill it with healthier goods.

So, we did what most all folks do in January ...
we formulated our plan & got started!
I thought I'd share our new game plan cause I'm quite excited about it.
{And, to report, we've stuck with it since we rolled it out!}

Here are the changes we've made as a family, regarding FOOD:

We decided there are some things that we no longer want to bring in the house on a regular basis.
  • chips
  • processed sweets such as snack cakes & cookies 
  • {processed foods in general should be limited}
  • individual oatmeal packets
  • canola oil 

Here are the replacements we decided on:
  • baked chips
  • homemade sweets on occasion
  • fruit bars / granola bars {healthier type -- for example Trader Joe's varieties}
  • homemade granola **{I'll share a recipe for that soon}
  • fruit leather
  • large container of DIY instant oatmeal sweetened with brown sugar, cinnamon, nuts, etc**
  • {I'll share my recipe for this soon}
  • coconut oil, olive oil, butter

We also decided to limit ice cream, not keeping it as a staple in the freezer.
We are using whole grain bread more, white bread less, & keeping Ezekiel bread in the freezer for toast.
James & I are using Stevia in place of sugar {the boys don't care for it too much}.
Although I wouldn't say we drink a lot of soda, I am buying less of it ...
keeping  iced tea & lemonade in the fridge.
Gunnar bought a Voss water in the glass bottle & Riley liked the looks of it, so I bought a few of these reusable bottles {along with a couple other containers} to make drinking water a bit more 'exciting'.

James & I have switched to drinking the Kroger CARBmaster milk.
{The boys still have to have their whole milk ... can't get them to drink anything but.}
It's a nonfat, reduced sugar milk drink & it’s delicious, which I was not expecting.
It's low in carbs, packed with 11g of protein per serving, & is lactose free.






I pick up the lactose free milk at Aldi sometimes if I'm not stopping in at Kroger,
but the Kroger brand is my favorite.
The Aldi one is cheaper, but seems to have a sweetness to it that the other one doesn't have.

We also LOVE the CARBmaster yogurt.

One of our favorite new things is this: 
I've been keeping fruit & veggies cleaned, chopped, & ready to eat in the fridge.

I have some nice divided containers that I've been filling with broccoli, cauliflower, radishes,
multi-colored pepper strips, carrots, & celery.
These are great snacks & ready toppings for salad.
{I always have spring mix & fresh spinach.}

And the same idea with the fruit:  strawberries, various melon, pineapple, & grapes.
We all seemed to think that if these foods were prepared & ready,
we'd choose to eat them more often ...  and it's absolutely true!
We've been going through the fruit & veggies more quickly than usual.
As a bonus, I've been making veggie & fruit dip to go alongside.
Course, we always have apples, oranges, bananas, & tangerines in the fridge & fruit basket.

Speaking of fruit & veggies, I bought James the juicer that he'd been wanting forever for Christmas ...
& let me just say, the juice that's been coming out of that thing is nothing short of uh-mazing!!
Fresh orange juice?!  Well, let's just say I can't get enough of it!
{He got an espresso machine for his birthday in November, so we've been drinking like
kings & queens around here!! LOL}

Lastly, & although eating Greek yogurt is nothing new around here,
we've been really enjoying more treats made with it.
{I'll share my favorite recipe with Greek yogurt later this week.}

All these changes came about by sitting down with the whole family & talking about what foods
we should try to eliminate, identifying which ones are those 'trouble' foods
{the ones that aren't good for ya but you can hardly stay out of them when they are in the house ...
think Oreos, chips, ice cream!}.
We all listed foods that we'd like to have more often.
I wrote everything down & have not variated from it.
It's working because we all agreed on it & resolved that we were going to make 
these healthy changes work!

Making health a priority feels really good.
We have a ways to go & plenty of room to improve,
but are enjoying the benefits of our decisions already.

March Was Successful-ish Because:

Well, this is a LATE March accountability post.
Good grief ... it's nearly time to post the one for April.

Truthfully, I've been dragging my feet in putting this one out there
cause I've got no real brags to share.
I'm sad.

The high point in the month of March was James reaching a 30 lb loss
AND I hit my 20 lb loss!
Yes, we were completely excited!
We hit those numbers at the 11 week mark.
Not bad ... not bad at all.

Another cool thing, I bought a blouse in January with some birthday money.
It was a bit snug, but I decided to keep it & aim to lose into it by Easter ...
And I did!
I wore it Easter Sunday & was proud of that achievement.

The rest of the month, unfortunately, there was no more excitement.

See, I've plateaued.
James, not so much ... he's losing inches like nobody's
business.
He lost out of bigger clothes & into smaller clothes.
He is doing soooo well.

I just can't seem to lose.
I've bounced back & forth 2 lbs for weeks now.

I've not been exercising like I had been & not counting calories as closely as before.
I've had a couple weeks of just kind of forgetting about my plan.
Yea, I enjoyed eating what I wanted...
BUT I did NOT enjoy how I felt ... physically, mentally ... just felt cruddy.

So, the lesson I've learned more times than I can count took it's rightful place
at the forefront of my mind again.
Right where it belongs.

See, a right decision begets a right decision {& vice versa}.
With every right food choice, every walk on the treadmill, you gain strength, resolve, & belief!
It makes you want to eat the right thing again & walk on the treadmill again.

That's the track I've got to stay in.

I am happy to report that I'm back on track.
I'm food journaling my calories, bike-riding, walking on the treadmill & around the neighborhood.
I've even up-ed the incline in the treadmill & that's a good accomplishment.

So, my hope is that for my April accountability post, I'll be able to share another loss.
And maybe, just maybe, I'll be sharing a comparison pic soon.

February Was Successful Because:


Hello everyone =)
Greetings from cold Indiana.
Someone so needs to tell the sun to SHINE already.
Brrrr!
We are counting down the days til spring & are hoping some warmer weather
decides to accompany it.
In Indiana, you just never know.

I thought I'd give you an update of how things are going around here.
I shared in January that we have embarked on a major lifestyle change.
We are getting healthy!
{If you didn't get a change to read all about it, bring yourself up to speed here.}

I'm happy to report that we are still going strong!
James is down 23 lbs & I'm down 17.
We are so not mad at those numbers!

Our motto for the month of February was "STAY FOCUSED" ...
& that's precisely what we are doing!

James & all four boys joined a gym & have been going at it, hardcore.
They are usually at the gym somewhere between 4 - 4:30 a.m. before they head to work,
6 days a week.
I know, right?!
I'm so proud of them!

As for me, I'm walking on the treadmill here at home & I've got some workout dvds.
Key word phrase:  "I've got some" ...
Notice how I didn't say I was working out to some dvds...yea, I need to get busy on those.
Just having them is not doing the trick.
Erg.

As for the gym, James & the boys are begging me to join them ... & I will ... eventually.
Umm, I'm just not ready yet.
I'm gym shy ... for now ;)

What's still working great is counting calories {James is using myfitnesspal.com & I'm food journaling}.
We are eating plenty of lo-cal, high protein foods & cutting out processed junk.
James & the boys have added in protein shakes ...
& greek yogurt, well, it goes like hotcakes around here.

We've haven't been eating out much, but when we do, we plan ahead by looking up the cals
& making healthy choices.
We even had a 4 day mini-vaca to St. Louis during Feb. & we stayed on target the whole time,
coming home without a weight gain.
Yeeaaah!
AND we even ate at Pappy's Smokehouse {bbq joint} ...waited almost 2 hours to get in, get seated, & eat.
It was so, so good.

And I'm putting out my disclaimer right now.
It's only because I'm under the influence of cold meds, I'm sleepy,
& I'm suffering from a momentary lapse in judgment that I am sharing this pic from Pappy's.
Well, that & cause it's playfully  inappropriate for this blog post ;)


Oh lordy ... forgive me, sweet blog followers, if I've crossed the line ;)
Everyone needs a giggle every now & again.

Ok ... enough of my misbehaving ...

Maybe in a few days, I can share with you some of the food 'staples' that have been working for us.
And maybe you can share some food faves back with me.

Skinny Cake


We've been getting healthy around here & with that, we've been trying a variety of new recipes.
We totally hit the jackpot with this one.
I've made it several times, shared it several times, & have gotten rave reviews every.single.time.
It's super easy & my favorite things about it, it's SO moist!

Here's all you need:
1 box cake mix & 12 ounces of diet soda.

Serious.
That's it!
No eggs, no oil, no water ... the dry cake mix & soda.

It doesn't matter what flavor cake or what flavor soda.
You pick what suits you or use what you have in your pantry.

I've made the chocolate with Coke Zero, french vanilla with diet Cherry 7-Up,
butter pecan with diet cream soda ...the possibilities are endless.

Mix the 2 ingredients together & pour into a 9 x 13 pan sprayed with cooking spray.
Bake for 25 minutes at 350.
{If you'd prefer cupcakes, this makes approximately 24}

I frost my cake with one of these 2 options ... whichever I'm in the mood for:

8 ounce tub of Cool Whip   OR
8 ounce tub of Cool Whip mixed with 1 small box of instant fat free/sugar free dry pudding mix

The cake has a similar taste & fluffiness as an angel food cake ...
so to me, it tastes great to me absolutely plain with no icing at all.


**Calories for 1 cupcake {or a similar size piece of cake} iced w/cool whip pudding mixture = 110!

Thus the name:  Skinny Cake!

Our Plan of Attack for 2013

I posted this pic on James' FB page ... we are claiming it!


Life can get away from ya if you don't have a plan.
Minutes turn to hours & hours into days ... & before you know it, 
a whole entire month has passed by.
As I look back over the last maaany years of my life, 
it seems like they've flown by at breakneck speed.
And I don't like it.
I don't like it one bit, but the reality is, I cannot stop the clock.
The only way I have found to somewhat make peace with this is  
to make every day count. 
And ya know, I used to be pretty good at it.
The last couple of years though, not so much.
Instead, I've kinda let life happen to me.
Seems I've been moving in slow motion, a bit lethargic, just going with the flow.
I haven't had much of a plan, no real motivation, no zest for life.
And I am so over it.
Enough already.

I thought I was at rock bottom for several years now, but no.
Rock bottom came from about September on ... & especially in December.
I knew there was no way out but up.
I was at the end of my rope ... & it was either fall off OR start climbing up.
I chose to climb.

No more drifting here & there from whatever current wind was blowing ...
without a destination, without a course of action, without a plan.
No more.
It's my life.
I must get a hold of the wheel & start steering in the right direction.

Armed with my new positive attitude ... my sink or swim motivation, 
I started formulating a plan.

On New Year's Eve, James & I went to dinner ... & we talked, took notes, & planned.
James, knowing full well that I was at that rock bottom place, 
had already been working on his plans for 2013 ... 
not only for him, personally, spiritually, & professionally, but for me as well.
He wasn't planning on leaving me behind.
His exact words were this, "YOU are my project for 2013."
He said he would do whatever it takes to help me shake off every problem 
& move strongly ahead, making peace & putting to rest all the things 
that have been taking up too much space in my head ... & in my heart.
I truly felt like I was being rescued ... like help had shown up right on time.


James is ALL these things to me.  He's my rock.


Within the next couple days, we had mapped it all out & we ready to move forward.
Full speed ahead.

Our 1st order of business:  GET HEALTHY!
We decided to start counting calories.
He's using the My Fitness Pal app & I am keeping a food journal.
In essence, we're both journaling, 
only I am doing it the old fashioned way ... paper & pen.
I'm tracking every single thing I eat & the calories, 
along with my liquid intake each day, the vitamins I've taken, 
& how much exercise I've done.
I'm writing down how I've felt physically, mentally, etc ... 
& general notes about what's gone on in my day.
{I saw a lady interviewed in December ... she has food journaled for 7 years & has successfully kept off 100+ lbs!  She attributed much of her success to journaling.}

We decided how many calories we wanted to use each day & the amount of of exercise.
Our food plan was to cut out processed & fast food, lower our carbs,
& very little food consumption after dinner.
Our liquid intake was upped to a minimum of 96 oz per day.
And I'm happy to report that as of today, January 29, 
James has lost 15 lbs & I have lost 9!
I'd say it's been a pretty successful month, right?! =)

We've eaten out a few times this month ... & each time, we've looked up the calories
for the restaurant ahead of time & have chosen wisely from the nutritional info.
We've also discovered sweet Italian turkey sausage links ... delicious.
We've enjoyed lots of Greek yogurt & have tried many new 'skinny' recipes found on Pinterest.
{I'll be sharing those periodically.}

For extra motivation, we decided to pick a different phrase to use each month of this year.
This month, we decided to use the phrase POWER THROUGH! 
I wrote it on our kitchen chalkboard so we see it every day.
We have said it & have texted it to each other countless times.
I woke up to find this little sign that James had made sitting on our bathroom counter ...
& there it stayed the whole month long.
{This goes along with yesterday's post.}


It really sums up our state of mind for this whole month.
We've powered through on the treadmill.
We've powered through our negative thoughts ... 
& powered through our desires for junk.
We CAN power through much more than we give ourselves credit for!


The second main thing in our plan was for each month to have a theme of sorts.
January's theme has been SIMPLIFY.



This is nothing new.
I am always in a 'simplify' kind of mood.
But for this month, everyone had to get on board.
The closets have been cleaned out, the garage cleared, & lots of Goodwill donations made.
{The biggest donation was about 340+ books!!  I'll have to tell you about that one soon.}
James has cleaned out his office & I've been decluttering kitchen drawers & cabinets.
It feels sooo good.
Our whole entire home feels lighter & airier.

Our 3rd main goal was to plan in advance everything that could be planned in advance!
So, we sat down with our calendars & started getting things marked down.
We penciled in potential daycations, vacations, weekend & camping trips. 

We also decided to be more vigilant in visiting family this year ... those near & not so near.
Those trips were marked on the calendar.

And the biggest achievement of all, we mapped out the year for our church.
We have activities lined up & new plans to put into action.
We must be about Father's business, greater this year than ever before.

I work in the worship department, so for nearly this whole month, 
I've organized & planned for 2013, preparing for our best year yet.

I'm sure, as with any set of plans, there will be adjustments along the way.
But I have to admit, it is truly exhilarating to have the whole year penciled in!!
I feel so ahead of the game!

I read that one of the most important steps in planning & setting goals 
is to write them down.
It's the difference between having a 'ok' life ... or a life that you absolutely love!
It's the difference between 'getting by' ... 
or being successful in creating true happiness in your life.


Sounds like a win-win to me.
While I'm in no hurry for this year to pass by,  I am already anticipating writing
 my year-end review blog post ... my highlight reel for 2013.
I know I'll have a whole year of accomplishments to be proud of.
I know I will say that 2013 truly was our year.


For this reason I bow my knees before the Father, 
from whom every family in heaven and on earth is named, 
that according to the riches of his glory 
he may grant you to be strengthened with power through his Spirit in your inner being,  
so that Christ may dwell in your hearts through faith—
that you, being rooted and grounded in love,  
may have strength to comprehend with all the saints what is the breadth and length 
and height and depth,  
and to know the love of Christ that surpasses knowledge, 
that you may be filled with all the fullness of God.
Now to him who is able to do far more abundantly than all that we ask or think, 
according to the power at work within us, to him be glory in the church and in Christ Jesus 
throughout all generations, forever and ever. Amen.
