Copycat KFC Cole Slaw


The operative word when talking about our little garden is little, however, 
we've been enjoying some big taste from the veggies that we've been picking.
We've had several cabbages, not big ones, but several nonetheless.
It was one of our cabbages that gave us this delicious cole slaw.
So, little garden for the win!



Now, I am a little picky about my cole slaw.
I like it sweet, not vinegary.
James likes it both ways.
We both looove BBQ and cole slaw is an absolutely perfect side to go along with it.
(Or ON it!  Have you ever done that?  Piled the cole slaw right on top?  Try it!)
I don't always make it from scratch, but when I do, this is my go-to recipe.



My sweet daughter-n-law, Abigail, was over one afternoon & we were cooking ...
so she actually made this batch.
It was her first time to make from-scratch cole slaw.
(She liked it so well, she's made it again using cabbage from their garden.)
Isn't it colorful & pretty?



Here is the original recipe that I got at a Weight Watchers meeting years ago.
It's only 5 ingredients!

1 cup fat free Miracle Whip
1/2 cup sugar or sugar substitute 
8 cups cabbage, shaved or finely chopped
2 Tbsp. carrots, shredded
2 Tbsp. onion, finely chopped

Place all the veggies in a large bowl. 
In a small bowl, mix the Miracle Whip & sugar until the sugar is dissolved. 
Pour the dressing over top of the veggies & toss until combined.
Cover & chill.

Serving size:  3/4 cup
Points: 1.5
Calories 57
Fat: 0

Now, here are the changes I made.
I used light Miracle Whip & Stevia.
That altered the calories a bit, but not the flavor.

Easy Peasy Pesto!


Can anyone guess what I'm making?



I have to say, there's something pretty cool about walking out the patio door to my little raised bed garden,
picking my basil, washing it off, & in just a few minutes flat, having homemade pesto!





It was that easy.

Well, considering I had already purchased the additional necessary ingredients ;)
(And those pesky pine nuts aren't the easiest thing to find!)
(I've heard you can use just about any nut & I think I'd like to experiment & see.)

If you want something fresh, flavorful, quick, & easy to add to grilled chicken, shrimp, or pasta
(or a hundred other things), look no more!




Ingredients
  • 1 cup packed basil leaves
  • ¼ cup pine nuts
  • 1 tablespoon minced garlic
  • ⅓ cup extra virgin olive oil
  • ⅓ cup shredded parmesan cheese
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ½ teaspoon fresh lemon juice
Instructions
Add all ingredients, except oil, to a food processor or blender & put on the lid.
Stream in the oil through the opening on top as you are pulsing the ingredients.
Do so until smooth. 
{You want it to come together & be creamy, but not too runny.
Adjust the oil, if necessary.
If you want to be conservative on the salt, start with ¼ teaspoon, but these amounts are pretty spot on.
Extra lemon juice can be added for a more lemony flavored pesto}

Serve immediately or cover and store chilled. 

Yields:  approx. 1 cup of pesto.

And there ya have it ... Easy Peasy Pesto!

Vinegar Soaked Cucumbers





I like cucumbers plain ... James, not so much.
James loves vinegary stuff ... me, no way, Jose.

However, this is a recipe that brings us together on two things we aren't crazy about!
It's so good!

On Saturday, James decided to grill out for us & all the kids.
He went to the store, bought everything for the meal, & cooked the whole thing!
He decided that he wanted to do something along these lines with our plenteous cucumbers,
so after checking out a few recipes, this is what he came up with.

As for the rest of the meal, he had shrimp cocktail for appetizers, huge  T-bone steaks, grilled onions,
baked regular & sweet potatoes, and these vinegar soaked cucumbers.
It was quite a spread.




I wanted to share this recipe with you because it was just that good!

  • 4 large cucumbers, peeled & sliced
  • 1 small onion, sliced
  • 1/2 tsp. each salt & pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. Tuscan seasoning
  • 1 cup white vinegar
  • 2 cups water


Place peeled, sliced cucumbers & onion in medium glass dish.
Sprinkle all dry seasonings over top.
Next pour in vinegar, then water.
Gently stir til combined.
Cover & refrigerate for the flavors to combine & marinate the cucumbers & onion.
This can be eaten in a few as a couple hours or kept in the fridge for several weeks.


Tips:
This is a guide.
All of the seasonings can be adjusted according to taste.
If you do not have a Tuscan seasoning, any type of Italian seasoning blend with provide great flavor.

This is great as a snack or served alongside about anything, especially grilled meats & BBQ.

Refrigerator Pickles





Here's a quick and easy recipe for Refrigerator Pickles.
What's especially nice about this one, you don't need a canner!
{Good thing cause I don't have one.}

I hunted down a recipe for Refrigerator Pickles for that very reason ...
I don't have a canner, but have plenty of cucumbers coming on.

I remembered seeing an episode of the Duggar's where they'd experimented in canning their own pickles.
It looked easy enough & I'm glad to report, it is!
I made several batches last year was completely pleased.

Aren't these so purty ;)



Now, I have searched HIGH and LOW for the exact recipe I used & I am so sad that I cannot find it!
{and mad that I spent so much time trying to find it ...grr!}
{Anyhoo, sorry for venting about that.}
This one is pretty close though.

Ingredients
  • 2 pounds of cucumbers
  • 1 large red onion, sliced
  • 8 cloves garlic peeled
  • 1/3 to 1/2 cup fresh dill  
  • 1 teaspoon dried dill
  • bay leaves
  • 1 teaspoon mustard seed
  • 1/4 cup kosher salt
  • 1 jalapeno pepper, sliced
  • 2 tsp. red pepper flakes
  • 2 tsp. black pepper
  • 8 cups water
  • 3/4 cups cider vinegar
Instructions
  1. Combine the water, vinegar, salt, mustard seed, and dried dill in a large kettle and bring to a boil. 
  2. Heat until the salt dissolves.
  3. Meanwhile, divide all the remaining ingredients between 4 quart jars.
  4. Pour the brine over the cucumbers and put the lids on the jars. Give each jar a shake to mix all the ingredients together.
  5. Let the jars sit on the counter until cooled, about an hour, and then put them in the fridge. They are ready to eat in 24-48 hours & will last for 4-6 weeks in the fridge.

*You can taste your brine before you pour it over the cucumbers.
If it's too salty, add a bit of sugar til it balances out.

**Also, pickles can be sliced or speared, whatever your preference.
And garlic cloves can be whole, sliced, or diced.
Again, up to you.
Lastly, if you don't want your pickles spicy, leave out the jalapeno &/or red pepper flakes.



My daughter-n-law, Abigail, has been making refrigerator pickles too.
I'm not sure what recipe she used, but ours look pretty similar.

Chicken with Fresh Basil & Tomatoes


One of the best decisions I made this spring:
planting this BASIL plant in our little raised bed garden!


This is right after we planted it.
It's next to our chives, which have grown back for 2 years, and as you can see, are in full force.


The basil took off immediately & I have had lots of it for months!
When you approach the garden, the basil is what you smell.
It's so aromatic & hearty ... & as soon as I pick it off, it grows back full & fast.
I could seriously go on.

The recipe that I'm sharing, I like to make year round, but especially when I can go out
& pick off the fresh basil right out of our garden.




So, here you are!
Doesn't this look AAHHH-mazing!!?!




And the other really great thing, it's a recipe where all the magic happens right in ONE PAN.
No need to dirty up and extra dishes.




Here's the recipe guide:

In a large skillet, heat a couple tablespoons of olive oil & throw in a pat of butter for extra flavor.
Place the chicken breast {boneless, skinless} in olive oil & butter.


Season the side that's up with pepper & 1/2 an envelope packet of seasoning.
I usually always have a few of these seasoning envelopes on hand, so I use whatever that's for chicken.
These are awesome because there's loads of seasoning & flavor in one packet and they cost under $1.
This particular time, I used a wine & herb envelope from Aldi.
After 5 minutes or so on medium heat, turn the chicken over & season the other side pepper
& the remaining 1/2 of the seasoning packet.
Continue to pan sear for another 5 minutes of so.

Next, sprinkle 1 tablespoon of parmesan cheese {the kind in the green can}
& 1/4 - 1/2 of fresh basil {if you only have dried, reduce to 2-3 Tbsp.}.
For the last yummy ingredient, add in 2 cups or more of cherry tomatoes.
Turn heat to low, put on lid, & the tomatoes start getting completely wonderful.
Some will stay whole, some will split, ALL will get so sweet and delicious!
They are the final touch that takes this meal over the top.







It's colorful & FULL of flavor.

And as if this recipe isn't wonderful enough, here's one more reason to add this one to your menu:
It's extremely versatile!

If you happen not to have cherry tomatoes, used fresh diced ones.
That's what I did here.
I used garden tomatoes, diced up & tossed in.

{And if you don't have fresh tomatoes to dice, open a can of tomatoes.
They will work just as well!}

Don't you just love those big ol' basil leaves?




Here's it's served alongside broccoli from our garden too!
It's our first time to grow broccoli and it's done really well.

Shopping For The Garden



I can't remember the last time I went through the gardening area to look at something other than flowers.
I take care of that department ... and James takes care of the vegetable plants, etc.
However, we got a new Rural King recently & they have a delightful bunch of interesting plants!
I couldn't help but snap a few pictures of them -- such a wide variety.



A Citronella plant ... a Stevia plant ... how neat are these?






Cinnamon basil ... never knew there was such a thing.
There were maybe 5 or 6 different varieties of basil!
We bought the sweet basil plant.




And the lemon balm smelled perfectly lemony.
We went through smelling every other plant ;)




I could've gone on & on snapping pics of plants I'd never seen before.
By the time we were done, we were wishing our garden was a bit bigger.




We made our purchases & put them in the raised bed garden as soon as we got home.
(Gunnar built it two years ago -- take a look at it if you haven't before.)




Here's the little sweet basil.
It's ganna be delicious in something Italian.




All done.
We've got it chock full ... maybe too full.
Along the back side of the bed, we planted our tomato plants in containers
& we planted a couple cucumber plants under the tree.
That was an experiment, so we'll see how it goes.




You can see the bunch of chives in the above pic.
We planted those two years ago.
I cut off a whole mess of those & soaked them in a bowl of ice water to clean them.
I let them dry on a kitchen towel, chopped them a bit finer & bagged them up ...
one for us & one each for our married children.
We've been enjoying these chives in salads & potato dishes.
 



And this lovely bouquet of flowers, well, these are from the chives too!
The lavender blooms are actually edible too, but we never have.




And lastly, this adorable bunch of flowers are been sitting in my window sill too, waiting to be planted.
These were a gift from my sweet young friend, Hannah, as a Mother's Day prize.
Aren't they so fun?





We are looking forward to all our vegetable plants taking off ... and it'll be good eating soon.
Nothing like fresh, homegrown garden food.

All the flowers in the front garden, along with the pots & containers in the back have been planted too.
I'll show you those tomorrow.

Let us take a look at Lettuce~

Gunnar's raised bed garden is coming right along.
Thought I'd give you a picture update.


Isn't it beautiful?
I love the blackness of the dirt against the vibrance of the green.

Gunnar has been growing little starter plants, various peppers & tomato in his window sill
& just planted those too ... they are just a bit small to see in this pic.


It's about time for a salad, don't ya think ... & a green onion or two?


Just one minute while I stir up a bowl of homemade ranch dressing.
You're looking pretty good there, lettuce.


This delicate dill just might make that ranch dressing a little tastier.


Remember how I told you about the cilantro making its grand appearance in the salsa?
Completely stole the show.


And last but not least, these chives are about to perk up some garlic mashed potatoes.
Ah yea, we are loving Gunnar's little raised bed garden.


It may be little garden, but we're grateful for it.
Nothing like walking out the back door & clip off some fresh herbs or tasty veggies.

Prettying up the Porch & Patio

Memorial Day proved to be a work day around the Pennington place.
We didn't set out for that to happen, but once we got started, we just kept plugging away.
The garage was cleaned out & organized ... again.
With as many working men, tools, work boots, tool boxes, & tools {get the picture} around here, 
there's no option but to stay up on the organizing.
Three vehicles were cleaned out & vacuumed.
Bedrooms & closets were cleaned & laundry was caught up.
The fun work of the day, however, was on the porch & patio.
Here are a few pictures of what we accomplished.


 
I had decided that I was going for a certain look for the front porch this year.
I wanted to paint the big pots bright green, of the lime-ish shade  -- & add accents of black & white.
That was my plan for weeks ... until I stumbled on these primitive buntings again this year!
{I've had these before, but hadn't found them in a while.}


These wonderful buntings changed up my plan instantly.
Guess I was feeling extra patriotic.
I bought a large one for the front & 2 small ones for the sides, but the large one just didn't hang nicely.
I opted to return it & do 4 small ones all the way around.


I don't have the whole look pulled together just yet, but considering I am usually behind
on posting things on here as they are occurring, I decided to show what I've done for now
& update as I add more to it.
I am searching for 2 chairs for the porch, to stay out all summer,
but haven't found what I'm looking for just yet.
I also want to add a big primitive star right above these front buntings -- I have one,
I just need to have James hang it.


These are the pots that I had planned to paint green, but maybe next year.
To go with the primitive buntings, I decided to leave them as they are.
They aren't the perfect pots, but they were free, all three of them ... a trash pic score from a few years ago.


I decided to go with red geraniums for the main flower on the porch.
I added in a green plant for contrast & a vine that blooms yellow to cascade down the side.
Now to just practice patience til everything gets full & tall.

& one on the other end of the house by the garage.
{Not sure why I didn't take a straight shot!}


Also on the porch is the galvanized bucket filled with geraniums.


I love this little bucket ... James found it at a flea market.


I moved my little spiral tree from the living room out to the porch.
I want a light feature somehow or another, but I'm just not sure this is it.
It may go back inside, but for now, I'm enjoying it lit up at night.
{I searched & searched for lights on a brown cord with no luck.}


I added a new rug, but it bugs me that the 'W' really looks like an 'M' upside down.
I guess it wouldn't bug me as much if the 'W' wasn't too small.
Eh well ...

Lastly, I only hung one basket this year, instead of the normal three.
I think with the buntings, I don't need them.
I chose white geraniums.


Now, moving on to the front flower bed.


I only added a couple things here this year, one being a Double Knock-Out Rose Bush.
I've been wanting one for a year or so now & I'm anxious to see it take off.


I also added this {can't remember what it's called} ... it was marked down at Lowe's to $3!


These fushia geraniums were a gift for Mother's Day.
I took off the hanger & decided to sit it in the flower bed.
I love using various garden decor to spruce things up ... thus the tulips sign.
Kinda funny, I don't have a single tulip planted anywhere ;)


I am absolutely crazy about my Buttercups!
Here they are in the morning ... look at all those blooms!


And here they are one day later!
I love the contrast of the red tips before they bloom out into the gorgeous yellow!
Another favorite about these, they close up at night.
So sweet.


The last thing is my wonderful little dwarf Japanese Maple.
Love this thing!
It's a little blurry cause it's been so windy around here lately.


Here are a few pictures from the back patio.
I'll post some in a few days with all my patio furniture & umbrella, etc.

Here are my stacked pots that I've used for years & years.
Well, not the same ones exactly, cause they've been broken & replaced.
I had 2 sets of these at our old house, one on either side of our front door.
I just love them.
Here's what it looks like now, at the beginning of the season.
{I've added to the bottom & middle pots since this pic
cause it was looking puny & I forgot to add the vine.}


Here is what it looked like last year, a few weeks after planting .


And here's what it looked like at the end of season!
See why I am nuts about my stacked pots?!


In the top pot, I planted a Gerbera Daisy.
I've never planted these before, but they were marked down to $1 each & I love them.
This little gal shed half of her petals on day two =(


Here's the second one ... planted in another clay pot that sits on top of our fire pit when it's not in use.
The third one is yellow & was planted in the front bed.


I added 2 more hanging white geraniums.


 This one is quite quirky in shape, but that's alright.


James added this bird feeder last year & boy does it attract some beautiful birds.
Someone forgot to buy birdseed {we've gone through several bags in the last couple weeks}.


Another markdown was this miniature rose bush ... $3.
We planted it on the corner where we just removed a tall shrub that died during the winter.


And these 2 Easter Lilies were left-over from Easter at church.
We put them in the ground next to the mini roses.
We are thinking of digging up this side of the house & making a bed, but just haven't decided.


We transplanted some ivy next to the mailbox & have done a few other things this week.
We've yet to get the fresh mulch put down.
Once we get it all done, I'll share a few pics of the front yard.
Nothing fancy, but it sure is looking great around here though, little by little.
Of course, my summer evening job pruning, dead-heading, & watering has begun.
It's a big job ... & hopefully this summer won't be SO hot as it was last year.
It nearly burnt everything up.
